White Bean & Kielbasa Soup

Soup is perfect for January weather, especially when paired with some fresh baked bread. This soup brings together the comforting creaminess of white beans with the tang of the kielbasa and tomatoes.

Ingredients
  • 1 Turkey kielbasa, cut into bite-sized pieces
  • 1 Tablespoon oil
  • 2 cups Beef broth (or water)
  • 3-4 medium carrots, cleaned and chopped
  • 2 celery ribs, chopped
  • 2 cans Navy beans (or the cooked dried equivalent)
  • 1 can diced tomatoes (or fresh equivalent)
  • 1 Tablespoon dill weed
  • salt & pepper
Instructions
  1. Sauté the kielbasa in oil until it begins to brown.
  2. Add carrots and celery and sauté for 2 minutes.
  3. Add beef broth and deglaze the pan, stirring to loosen any brown bits.
  4. Add beans, tomatoes and dill weed, stir. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Taste for seasoning and add salt & pepper to taste.
  7. Serve with crusty bread.
