White Bean & Kielbasa Soup

- 1 Turkey kielbasa, cut into bite-sized pieces
- 1 Tablespoon oil
- 2 cups Beef broth (or water)
- 3-4 medium carrots, cleaned and chopped
- 2 celery ribs, chopped
- 2 cans Navy beans (or the cooked dried equivalent)
- 1 can diced tomatoes (or fresh equivalent)
- 1 Tablespoon dill weed
- salt & pepper
- Sauté the kielbasa in oil until it begins to brown.
- Add carrots and celery and sauté for 2 minutes.
- Add beef broth and deglaze the pan, stirring to loosen any brown bits.
- Add beans, tomatoes and dill weed, stir. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Taste for seasoning and add salt & pepper to taste.
- Serve with crusty bread.
