April Food Challenge Day 3

NOTE: Sorry this has taken so long to get posted; there’s been a lot going on lately.

If you’re keeping score at home, at the end of Day 2 we had completed the first 3 of 21 recipes for this challenge.  For Day 3 of the challenge we knocked out another three recipes!

(4) Squash Croquettes

John mentioned croquettes this morning as a way to use some squash that has been in the freezer since last year.  While looking at recipes I selected this one because it also calls for two other ingredients that we had on hand that were in need of a use before they got too old to use – bread crumbs and cornbread.

Verdict: Delicious! Will make this again for sure.

(5) Mess o’ Greens Salad With Warm Pecan Dressing

I picked this recipe because I liked the idea of having turnips as a raw salad and this warm pecan dressing promised both simple preparation and sweet nutty goodness that we both love.  It helped as well that (once again) we also had pecans on hand that needed to be used.

Verdict: Good, but the mustard made it a bit strong.  Will modify and make this again in the future.

(6) Coconut Cream Pie  (not pictured)

This recipe had to set in the fridge and took longer than expected, so it did not get photographed when it was made.  John wasn’t sure if it was going to set like the recipe claimed.

Verdict: Delicious! Will make this again for sure.
