April Food Challenge Day 14 Update

The month is nearly half gone but we’re making a lot of headway on the food challenge already.  Tonight we knocked out another three recipes.  Both John & I were hungry for something new and each one of these fit the bill.

(7) Mandarin Chicken

Chicken is a staple in our house so we are always on the lookout for new ways to prepare it.  We’re both fans of Asian cuisine so this one was an easy “yes”.

Verdict: This recipe rocks!  Dead simple to make and oh so tasty!  We will thicken the sauce a bit more next time but the flavor is spot on.

(8) Honey Glazed Carrots

How can you go wrong with carrots and honey, really?

Verdict:  Don’t let the simplicity of this one fool you, it is perfect.

(9) Bacon Spinach Salad

Seriously?  Bacon in a salad is made of all kinds of WIN.  Charlie Sheen has nothing on this one.  We substituted beef bacon for the pork bacon since I can’t eat pork.

Verdict:  TASTY and definitely worth a try.


This combination may seem unlikely at first glance but we agree that the powerful flavors worked together for a beautiful blend of sweetness and acid.

The tally as of Day 14 is 9 recipes complete out of 20.
