Barefoot Contessa’s Lemon Yogurt Cake (#12)

There has been far too much responsible food in this food challenge and not enough because I want it food.

This recipe is pretty straight forward and not at all difficult and it has some serious lemon flavor.

In a world where people shove candy bars into their mouth without a second thought and often without taking a breath, it is nice to be reminded what it is like to enjoy an actual post-dinner dessert that took forethought, planning and specific effort. 

Sure, this recipe isn’t low fat, low calorie or low sugar, but it doesn’t contain any high fructose corn syrup, preservatives or anything else that we can’t pronounce. I strongly believe that if we can give up our dependence on fast food, snacks and sodas we can begin to worry a little less about the fat and sugar content of the foods we eat.  I think of it as I do an example with my own dog.  When I buy cheap dog food she eats like a horse because the low quality of the ingredients leaves her needing more and more to feel full and satisfied.  If we consume a higher percentage of high quality food in relation to the junk and convenience food, our bodies will react in kind.

Verdict:  Absolutely delicious and definitely a keeper.
