Homemade Cheeseburger Macaroni

Ingredients
  • 1 pound ground beef
  • 3 Tablespoons Homemade Taco Seasoning
  • 1½ cups diced tomatoes (or a can of Rotel)
  • 2 cups water
  • 1 cup macaroni noodles
  • 2 Tablespoons butter
  • 2 Tablespoons All-Purpose Flour
  • ½ cup milk (lowfat, whole, whatever you've got)
  • 1 cup shredded cheddar cheese
Instructions
  1. Brown ground beef and drain. Return to skillet.
  2. Add taco seasoning, diced tomatoes, water, and macaroni and stir.
  3. Bring to the boil, reduce heat to low and cover, simmering for 12-15 minutes.
  4. Melt butter in a saucepan over medium high heat. Add flour and whisk thoroughly.
  5. Stir butter and flour mixture constantly for a minute or two until it takes on a little color.
  6. Add milk and whisk until boiling.
  7. Remove from heat and whisk in cheese until completely melted.
  8. Pour cheese sauce into skillet and stir to combine.
