German Potato Salad

  • 2 pounds new potatoes (I prefer Yukon gold)
  • 1 small onion, diced
  • 4 slices bacon
  • ½ cup chicken stock
  • ¼ cup apple cider vinegar
  • 1 Tablespoon dried dill weed
  • 1 small bunch chives, minced
  1. Cut potatoes in half and boil in salted water for 15-20 minutes, just until fork tender. Drain.
  2. Cook bacon until crisp and drain on paper towels.
  3. Add onion to bacon drippings and saute until translucent.
  4. Add stock, vinegar, and potatoes and toss together. Simmer until liquid is absorbed.
  5. Toss in bacon, dill, and chives and serve warm.
