German Potato Salad

- 2 pounds new potatoes (I prefer Yukon gold)
- 1 small onion, diced
- 4 slices bacon
- ½ cup chicken stock
- ¼ cup apple cider vinegar
- 1 Tablespoon dried dill weed
- 1 small bunch chives, minced
- Cut potatoes in half and boil in salted water for 15-20 minutes, just until fork tender. Drain.
- Cook bacon until crisp and drain on paper towels.
- Add onion to bacon drippings and saute until translucent.
- Add stock, vinegar, and potatoes and toss together. Simmer until liquid is absorbed.
- Toss in bacon, dill, and chives and serve warm.
