Greek Inspired Marinade for Beef

- 1 cup olive oil
- 1 large lemon, juiced and zested
- 1 Tablespoon garlic powder
- 1 teaspoon onion powder
- 1 Tablespoon dried basil
- 1 Tablespoon dried oregano
- 1 Tablespoon dried thyme
- 1 teaspoon ground black pepper
- Combine all ingredients in a small mixing bowl
- Whisk together until thoroughly blended.
- Pour marinade over the meat and refrigerate, allowing it to marinate for 4-5 hours.
- Remove from the refrigerator and allow meat to return to room temperature before cooking.
Wait until just before cooking to salt the meat, as salt will draw the moisture from the meat making it dry and tough.
