Stuffed Crappie & Homemade Poultry Seasoning (#16 & 17)

Tonight’s dinner features some locally caught fish courtesy of John’s step dad and his love for the little fish with the unfortunate name.  For the record, around this part of the world it is pronounced “croppy”, so we aren’t eating crappy fish.

My experience with crappie has been limited to two fried fish dinners at the in-laws’, but we wanted to see if we could find another way to prepare it that would be just as good and this recipe seemed like just what we were looking for.  We did not have any poultry seasoning on hand, but as luck would have it the same website also linked to a recipe for making it, so that’s exactly what we did.

I was skeptical when I saw some of the ingredients in this seasoning mix because they didn’t all strike me as flavors that I remembered from any poultry seasonings I have used over the years, especially the optional cayenne (which I added anyway, since we both love spice).

Verdict:  Another mix that we’ll never buy again.  Awesome!

The crappie we had was pretty small and didn’t lend itself to stuffing so John improvised and layered two smaller pieces.  It may not have been exactly what the original recipe called for but he made it happen and even made it look nice enough to take a photo of.

Verdict: The stuffing itself is so perfectly seasoned that it would go with nearly any light white fish, possibly even with a tuna steak.  This was delicious and we will make it again and recommend it to all of our crappie eating friends and loved ones.
